Recipe

“HERRING SALAD”

Buy one of those filets which consist of two sides and soak as described above. Cut it in small strips.
The other ingredients:
three to four large, cold, boiled potatoes - mashed roughly;
one cold cooked beetroot - chopped;
four sour apples - peeled, cored and chopped;
five to six large sour gherkins - chopped;
one large onion or several small red ones - chopped (even better is when they have been pickled);
two tablespoons of chopped celery stalk;
a tablespoon of prepared French or Dutch mustard;
oil and vinegar salad dressing to taste.
Mix all these ingredients together with the herring and add freshly ground pepper to taste. Heap the mixture on a plate. Make a mountain or a fish shape out of it and garnish with mayonnaise, sliced boiled eggs, strips of pimentos for colour and parsley.
Just in case you do not have sour apples, unripe, medium sour mangoes may be used together with bits of pineapple.
