About 16 or 17 years ago there was no place in Pattaya
where one could buy decent European style bread. Then, when the Royal Cliff
Beach Resort decided to open the first bakery in Pattaya at that time, it
was like a fairy tale. All of a sudden one could now buy brown bread.
Now, after all those years, many other competitors are offering bread and
cakes, but the Royal Cliff Bakery is still one of the best. Joachim “Kim”
Caula, the pastry chef at the Royal Cliff, takes care that everything a
person with a sweet tooth could possibly dream of is available. There is a
choice of some 16 different kinds of bread, amongst them a very special
Yogurt bread, buns, rolls, croissants, pastries (filled or plain), and of
course sandwich toast.
The most delicious cakes and tarts, like Blackforest, St. Honore or Ganache
to name a few, are always available. Birthday cakes can be ordered in any
shape and with any decoration. Kim, the master of this art, has brought to
perfection what other confectioner’s are still just beginning to try.
He told us that all the cakes, tarts, buns, pies and pastries are freshly
baked every day. What isn’t sold on the day it is baked is given to the
staff, for only the most fresh will be sold to customers.
All the chocolate, which is used to make pralines, comes directly and only
from Switzerland, the world’s best chocolate producer. Many other
ingredients which are used are also imported from Europe to provide the best
possible taste.
Strawberry jam, pure or mixed with rhubarb, pineapple, or cinnamon, is also
available.
Since Christmas time is arriving, Santa Clause images made out of chocolate
or gingerbread are filling the boards, as well as cookies, marzipan,
eclair’s, Christstollen, gingerbread and Dundee cakes.
Thinking back many years ago, when one had to ask friends to bring bread,
chocolate or cookies from Europe when the urge for good things became too
much, now one feels like “Hänsel and Gretel” when shopping at the Royal
Cliff Bakery.

ATTENTION - LADIES, AMATEUR CHEF’S AND CHILDREN!
The organizing committee
for the first Thai Coffee Extravaganza met at the Royal Cliff beach
Resort on Nov. 30, 1996.
On Sunday, January 26, 1997, the very first Thai
Coffee Extravaganza will be held in Pattaya. The event will be held at
the Royal Cliff Beach Resort at the Siam Ballroom from 14:00 - 18:00
hours.
Entertainment will be provided by resident bands, a coffee exhibition
with the theme; “From the farm to the cup” will be held, as well as a
“big prize” raffle. Hot coffee, iced coffee, espresso, cappuccino and
hot chocolate will be served from the espresso cart and can be enjoyed
with sweets from the delicious dessert buffet. A “Coffee Cocktail Show”
will be put on for participants and spectators to watch while enjoying
the refreshments. A “Coffee Queen Beauty
Contest” will also take place and the winner will be the official
“Coffee Queen” for one year.
A children’s fancy dress competition will be held as well. There will be
one prize for the overall winner, and two prizes each for boys and girls
under 7 years old, as well as extra prizes for girls and boys in the age
group of 7 - 14. All participants will receive small token prizes. All
costumes for the children should be somehow related to coffee (for
example: coffee cups, coffee bags, coffee beans, ...) It’s all up to the
fantasy of children and parents.
A coffee-cake and dessert competition will also be held. Interested
participants should bring their own creations as well as known recipes.
This competition will be held for two groups, one for professionals and
one for amateurs. All participants will receive a personalized
certificate and the first three winners of each group will receive
respectable prices along with a diploma and medal. The deadline for
entering this contest is set for January 15, 1997.
Everyone is invited to compete in all events, or just come along and be
a spectator. The price of admission will be 150 baht for adults, 75 baht
for children, and family tickets are available for 500 baht (2 adults
plus a maximum of 6 children). Ticket sales will start this week (7
December 1996).

Competition” and an application form for the Fancy Dress Competition in

Recipe
AYAM PENIKI
This is not a “Panicked Chicken” as some may assume
from the name (most chickens panic when they are slaughtered) but a
delicious preparation to be eaten with rice.
Take one large chicken and cut it into the usual joints, drumsticks,
thighs, wings, etc. Clean and dry with some absorbent paper.
Pound in a mortar:
three cloves of garlic;
the white inside of six kemieri nuts (Aleuritus moluccana, when not
available use one or two tablespoons of toasted cashew nuts);
four red chillies without the seeds;
a teaspoon of toasted shrimp paste;
six thin slices of fresh ginger;
two tablespoons of thinly sliced lemon grass;
a little of the green rind of the Makrut lime (Cytris Hystrix);
seven thinly sliced small red onions.
When fine, fry this mixture in two tablespoons of vegetable oil and when
it discolours add the chicken and one and a half cups of coconut cream.
Add a tablespoon of tamarind juice made from “Makram Peeak”, two
teaspoons of refined sugar or a small piece of palm sugar, salt to taste
and three leaves of the Makrut plant. Let this simmer until the chicken
is done. It may be necessary to add a little water or coconut milk
during the cooking when too much liquid has evaporated. The chicken
should be served well done in its thick, creamy, pink sauce. This is one
of my own favourites.
