Cheesy and easy, this is still a great dish for a hungry family of four. The original recipe calls for an oven, but you could (in a pinch) use a microwave oven, but reduce the cooking time. For the cheese, I recommend you use one with plenty of flavor, I’d even suggest some gorgonzola if you cannot find a fully matured cheddar.

Pork fillets | 4 |
Cheese (grated) | 1 cup cheddar or ½ cup gorgonzola |
Cream | 1 cup |
French mustard | 1 tbspn |
Black pepper freshly ground | ¼ tspn |
Salt to taste |
Cooking method
Pound pork fillets until they are about one cm thick and then brown both sides of the fillets in a frying pan with just a smear of cooking oil. Place the browned fillets in an oven dish.
Combine the cream, mustard and black pepper and spread over the meat and then sprinkle the grated cheese all over the top.
Place in the oven on a moderate heat and bake for 30 minutes, or until the cheese starts to bubble.
Serve immediately with steamed jasmine rice.
