Chicken (sort of) Cordon Bleu

Chicken is a great meat for the home chef.  It is difficult to get it wrong, and compared to cooking beef, you do not have the problem with it getting too tough to chew through.  This recipe is even more simple than most, and yet promises a very flavorsome meal for the family.

Ingredients Serves 4
Chicken breast fillets 4
Salt and freshly ground black pepper
Sliced Cheddar cheese 4 slices
Lemons, halved 2
Streaky bacon 4 rashers
Olive oil

Cooking Method

Heat the skillet to high.

With the pounding hammer, flatten the chicken breasts to an even thickness.  Brush the chicken on both sides with oil and season with salt and pepper, to taste.  Cook for two minutes on both sides and just cooked through.  Put a slice of cheese on each breast, cover and let it melt slightly, about 40 seconds.  Pop the streaky bacon in the pan and quickly grill for about two minutes.

Brush the cut side of lemons with oil and grill, cut side down until golden brown and slightly charred, about 45 seconds.

Put the chicken breasts on 4 individual serving plates, top each breast with a slice of bacon.  Squeeze the grilled lemon on top and drizzle with olive oil.
