This Lamington recipe comes from Australia, where they are almost a national institution (like Brownies in America). Lamingtons are small cubes of cake, dipped in melted chocolate and sugar and coated in desiccated coconut. It relies on a basic sponge cake mix.

Eggs | 3 |
Castor sugar | ½ cup |
Self-rising flour | ¾ cup |
Corn flour | ¼ cup |
Butter | 15 gm |
Hot water | 3 tbspns |
Cooking method
Beat the eggs until creamy. Add the sugar and continue until all the sugar is dissolved. Fold in sifted SR flour and corn flour before combining with the water and butter. Place the mixture into prepared baking tins, roughly 18cm x 28cm. Bake in moderate oven for approximately 30 minutes. Let cake stand in pan for 5 more minutes before gently turning out onto wire rack.
Sift the icing sugar and cocoa into heatproof bowl then stir in butter and milk. Stir over a pan of hot water until icing is smooth.
Trim the brown top and sides from cake then cut it into 16 even cubes. Impale each piece on a fork and immerse each into icing. Remove from the icing mix, allowing the excess to drip off. Finally sprinkle the coconut onto the cakes. Place on oven tray to set.
