The Royal Cliff’s deVine Wine Club recently experienced a remarkable wine dinner celebrating “The Lafite Spirit, A Tradition of Excellence” at the Royal Grill Room & Wine Cellar. DeVine Wine Club members and wine lovers were delighted with the 5-course gourmet menu, designed by Royal Cliff’s Executive Chef Walter Thenisch, which was paired with excellent wines from Les Domaines Barons de Rothschild.
Over 60 guests were warmly welcomed by Prem Calais, the new resident manager of the Royal Cliff Grand Hotel, at the pre-dinner cocktail reception where a delectable selection of canapés were accompanied by Los Vascos Sauvignon Blanc, Casablanca, Curicó 2015 at the Royal Cliff Beach Hotel’s bar.
The five-course menu which followed at the Royal Grill Room and Wine Cellar featured an appetizing Confit of Petuna ocean trout and poached river prawns served with an Aussières Blanc, Vin de pays d’Oc 2012. Guests then enjoyed the Fricassee of Maine lobster & crab quenelle lightly perfumed in a Nantua sauce wonderfully paired with a Légende Bordeaux Blanc 2014 and mouthwatering Herb crusted grass-fed Australian lamb tenderloin and French flageolet beans stew served with the Aussières Rouge, Vin de pays d’Oc 2013.
A red wine-braised Wagyu beef ribs with bone marrow, silky mashed potatoes and glazed carrots accompanied by the Légende Bordeaux Rougue 2014 were the highlights of the evening. The night ended with a fine selection of gourmet cheese with crusty French baguette along with Los Vascos Cabernet Sauvignon, Colchagua 2014 and delightful petit fours from Royal Cliff’s talented pastry chef.
Aside from the enjoyable meal, guests also had the opportunity to enjoy the personal, rich and profound discourse of guest speaker, Fabrice Papin who is the Asia area manager for Les Domaines Barons de Rothschild and is from a family of winemakers as well as owners of vineyards in Bordeaux and Cognac. He has met many winemakers and has developed vast knowledge in the art of winemaking in his travels abroad as he continues to share his passion for wine with the world.
The deVine Wine Club was launched on April 28, 2001 as the visible face of the resort’s enthusiasm for promoting wines and hosting wine-related events. Today, membership has grown substantially and it is now Asia’s leading wine club which hosts popular gala dinners.
